For the Crust:

  • 3 large carrots, peeled and grated
  • 2 crisp apples (such as Honeycrisp or Granny Smith), julienned
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons fresh orange juice
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon honey
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the grated carrots, julienned apples, raisins, and chopped walnuts.
  2. In a separate small bowl, whisk together the Greek yogurt, orange juice, lemon juice, honey, cinnamon, and a pinch of salt until smooth and creamy.
  3. Pour the creamy citrus dressing over the carrot and apple mixture.
  4. Toss everything together until all ingredients are evenly coated with the dressing.
  5. Chill in the refrigerator for at least 15 minutes before serving to allow the flavors to meld.
