For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup unsweetened coconut flakes
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha sauce
Instructions
1. Prepare the Crust:
- Preheat the oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
- In a bowl, mix coconut flakes and panko breadcrumbs. In another bowl, place the flour. In a third bowl, beat the eggs.
- Dip each chicken breast first in flour, then in eggs, and finally in the coconut-panko mixture, pressing to adhere. Place coated chicken on the baking sheet.
- Bake for 25-30 minutes or until the chicken is cooked through and crispy.
- For the sauce, mix mayonnaise, sweet chili sauce, and sriracha until smooth.
