This crispy coconut chicken is coated with a flavorful mix of coconut flakes and breadcrumbs, then baked to perfection and served with a spicy, sweet Bang Bang sauce to tantalize your taste buds.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 cup unsweetened coconut flakes
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha sauce

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
  2. In a bowl, mix coconut flakes and panko breadcrumbs. In another bowl, place the flour. In a third bowl, beat the eggs.
  3. Dip each chicken breast first in flour, then in eggs, and finally in the coconut-panko mixture, pressing to adhere. Place coated chicken on the baking sheet.
  4. Bake for 25-30 minutes or until the chicken is cooked through and crispy.
  5. For the sauce, mix mayonnaise, sweet chili sauce, and sriracha until smooth.
