Description

A delicious moist loaf cake combining dates, coffee, and walnuts for a rich flavor.


Ingredients

  • 1 cup chopped dates
  • 1 cup strong brewed coffee
  • 1 cup chopped walnuts
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a bowl, soak the chopped dates in the hot coffee for 15 minutes.
  3. In another bowl, whisk together the flour, baking soda, and salt.
  4. In a large mixing bowl, cream the butter and brown sugar until light and fluffy.
  5. Beat in the eggs one at a time, then stir in the vanilla extract.
  6. Gradually add the flour mixture to the butter mixture, alternating with the date-coffee mixture.
  7. Fold in the chopped walnuts.
  8. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, use fresh dates and walnuts. This cake can be stored in an airtight container for up to 3 days.
