Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup chopped pecans
  • Caramel sauce: 1 cup brown sugar, 1/2 cup heavy cream, 4 tablespoons butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch cake pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the mashed bananas, eggs, and vanilla extract to the butter mixture, beating well.
  5. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, and mix until just combined.
  6. Fold in the chopped pecans.
  7. Pour the batter into the prepared pan and bake for 40-45 minutes, or until a toothpick inserted comes out clean.
  8. While the cake cools, prepare the caramel sauce: In a saucepan, melt brown sugar and butter over medium heat, then stir in heavy cream and simmer for 5 minutes.
  9. Drizzle the caramel sauce over the cooled cake before serving.

Notes

For best results, use ripe bananas and allow the cake to cool completely before adding the caramel to prevent it from becoming soggy.
