- 1 cup vegetable oil
- 2 cups grated carrots
- 1/2 cup crushed pineapple, drained
- 1/2 cup chopped walnuts
- For the frosting:
- 8 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, beat the eggs and sugar until light and fluffy. Gradually add the oil and mix well.
- Stir in the grated carrots, crushed pineapple, and walnuts.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bars to cool completely before frosting.
- For the frosting: In a bowl, beat the cream cheese and butter until smooth. Add powdered sugar and vanilla, and beat until creamy.
- Spread the frosting over the cooled bars and cut into squares.
Notes
Store in an airtight container in the refrigerator for up to 5 days. For a healthier option, substitute half the oil with applesauce.
