  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1 cup vegetable oil
  • 2 cups grated carrots

Instructions

  6. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the bars to cool completely before frosting.
  8. For the frosting: In a bowl, beat the cream cheese and butter until smooth. Add powdered sugar and vanilla, and beat until creamy.
  9. Spread the frosting over the cooled bars and cut into squares.
