Ingredients

  • For the crust: 1 1/2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • For the dark chocolate mousse: 8 ounces dark chocolate, chopped
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 cup heavy cream
  • For the milk chocolate mousse: 8 ounces milk chocolate, chopped
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 cup heavy cream
  • For the white chocolate mousse: 8 ounces white chocolate, chopped
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 cup heavy cream
  • For garnish: Fresh berries and whipped cream

Instructions

  1. Prepare the crust: Preheat oven to 350°F (175°C). Mix cookie crumbs and melted butter, press into a 9-inch springform pan, and bake for 10 minutes. Let cool.
  2. Make the dark chocolate mousse: Melt dark chocolate over a double boiler. In a bowl, beat egg yolks with sugar until pale. Fold in melted chocolate. In another bowl, beat egg whites until stiff peaks form and fold in. Whip heavy cream and fold into the mixture. Spread over the cooled crust and refrigerate for 30 minutes.
  3. Make the milk chocolate mousse: Repeat the process with milk chocolate and layer over the dark chocolate mousse. Refrigerate for another 30 minutes.
  4. Make the white chocolate mousse: Repeat with white chocolate and layer on top. Refrigerate the entire torte for at least 4 hours or overnight.
  5. To serve: Remove from pan, garnish with fresh berries and whipped cream, and slice.

Notes

Ensure all equipment is dry to prevent chocolate from seizing. This torte can be made ahead and stored in the refrigerator for up to 2 days.
