For the Crust:
- 2 cups all-purpose flour
- 1/3 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 3/4 cup cold buttermilk
- 1 cup fresh blueberries
- 1 tablespoon coarse sugar for sprinkling
Instructions
1. Prepare the Crust:
- Preheat oven to 425ยฐF (220ยฐC). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and salt. Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs.
- Gently stir in the cold buttermilk until just combined. Be careful not to overmix. Fold in the blueberries gently.
- Turn the dough out onto a lightly floured surface and pat it into a 1-inch thick circle. Use a 2.5-inch biscuit cutter to cut out biscuits, pressing straight down without twisting.
- Place biscuits on the prepared baking sheet, brush the tops with a little buttermilk, and sprinkle with coarse sugar. Bake for 15-18 minutes, or until golden brown.
