For the Crust:

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup cold buttermilk
  • 1 cup fresh blueberries
  • 1 tablespoon coarse sugar for sprinkling

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425ยฐF (220ยฐC). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt. Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs.
  3. Gently stir in the cold buttermilk until just combined. Be careful not to overmix. Fold in the blueberries gently.
  4. Turn the dough out onto a lightly floured surface and pat it into a 1-inch thick circle. Use a 2.5-inch biscuit cutter to cut out biscuits, pressing straight down without twisting.
  5. Place biscuits on the prepared baking sheet, brush the tops with a little buttermilk, and sprinkle with coarse sugar. Bake for 15-18 minutes, or until golden brown.
