- 2 cups grated carrots
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts (optional)
- For the frosting: 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, whisk together the grated carrots, granulated sugar, brown sugar, oil, and eggs until well combined.
- In another bowl, sift together the flour, baking powder, cinnamon, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the walnuts if using.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bars to cool completely on a wire rack.
- For the frosting: In a medium bowl, beat the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla, beating until creamy.
- Spread the frosting evenly over the cooled bars.
- Cut into squares and serve.
Notes
Store leftovers in an airtight container in the refrigerator for up to 5 days. For a nut-free version, omit the walnuts.
