Description

Ingredients

  • 2 cups grated carrots
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)
  • For the frosting: 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together the grated carrots, granulated sugar, brown sugar, oil, and eggs until well combined.
  3. In another bowl, sift together the flour, baking powder, cinnamon, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the walnuts if using.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bars to cool completely on a wire rack.
  8. For the frosting: In a medium bowl, beat the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla, beating until creamy.
  9. Spread the frosting evenly over the cooled bars.
  10. Cut into squares and serve.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. For a nut-free version, omit the walnuts.
