- 1 cup heavy cream
- 12 ounces semisweet chocolate, finely chopped
- 2 tablespoons unsalted butter, softened
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract (optional)
- 1 cup cocoa powder, for coating
- 1/2 cup powdered sugar
- Crushed peppermint candies or sprinkles, for rolling
Instructions
- In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat.
- Pour the hot cream over the finely chopped semisweet chocolate in a bowl. Let it sit for 5 minutes, then stir until smooth and melted.
- Stir in the softened butter and vanilla extract (and peppermint extract if using) until fully combined.
Notes
Refrigerate the truffle mixture for at least 2 hours or until firm enough to roll. For best results, roll truffles in coatings before they soften. Store in an airtight container in the refrigerator for up to 2 weeks. These make great holiday gifts!
