Description

These muffins are a delightful homemade treat with a cinnamon sugar swirl, ideal for an easy breakfast.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • Cinnamon Sugar Swirl:
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, until just combined.
  6. In a small bowl, mix together the cinnamon and sugar for the swirl.
  7. Fill each muffin cup halfway with batter, sprinkle with cinnamon sugar mixture, then top with more batter.
  8. Swirl the batter gently with a toothpick.
  9. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  10. Cool on a wire rack before serving.

Notes

For a twist, add chopped nuts or chocolate chips to the batter.
