- 4 lobster tails (about 6 ounces each)
- 1/2 cup unsalted butter, softened
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Lemon wedges, for serving
Instructions
- Preheat your grill to medium-high heat.
- In a bowl, mix together the softened butter, minced garlic, chopped parsley, smoked paprika, red pepper flakes, lemon juice, salt, and pepper to create the cowboy butter.
- Using kitchen shears, cut the top shell of each lobster tail lengthwise and loosen the meat from the shell, but keep it attached at the base.
- Brush the cowboy butter generously over the lobster meat.
- Place the lobster tails on the grill, meat side up, and cook for 5-7 minutes, basting with more butter halfway through.
- Once the meat is opaque and firm, remove from the grill.
- Serve immediately with lemon wedges.
Notes
For a spicier version, increase the red pepper flakes. Ensure lobster is fresh for the best flavor.
