For the Crust:

  • 1/2 small head green cabbage, thinly shredded
  • 1/2 small head red cabbage, thinly shredded
  • 2 large carrots, julienned or grated
  • 1 red bell pepper, thinly sliced
  • 4 green onions, thinly sliced
  • 1/2 cup sliced almonds, toasted
  • 1/4 cup chopped fresh cilantro
  • 1/3 cup neutral oil (like grapeseed or avocado)
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1 1/2 tablespoons honey
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced
  • 1 tablespoon sesame seeds

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the shredded green cabbage, red cabbage, carrots, red bell pepper, and green onions.
  2. In a separate small bowl or jar, whisk together the neutral oil, rice vinegar, soy sauce, honey, toasted sesame oil, grated ginger, and minced garlic until well combined and emulsified.
  3. Pour the dressing over the cabbage vegetable mixture and toss thoroughly until everything is evenly coated.
  4. Cover the bowl and refrigerate for at least 20-30 minutes to allow the flavors to meld and the cabbage to slightly soften.
  5. Just before serving, toss the slaw again, then garnish with the toasted sliced almonds, chopped cilantro, and sesame seeds.
