For the Crust:
- 1/2 small head green cabbage, thinly shredded
- 1/2 small head red cabbage, thinly shredded
- 2 large carrots, julienned or grated
- 1 red bell pepper, thinly sliced
- 4 green onions, thinly sliced
- 1/2 cup sliced almonds, toasted
- 1/4 cup chopped fresh cilantro
- 1/3 cup neutral oil (like grapeseed or avocado)
- 3 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 1 1/2 tablespoons honey
- 1 tablespoon toasted sesame oil
- 1 teaspoon fresh ginger, grated
- 1 clove garlic, minced
- 1 tablespoon sesame seeds
Instructions
1. Prepare the Crust:
- In a large bowl, combine the shredded green cabbage, red cabbage, carrots, red bell pepper, and green onions.
- In a separate small bowl or jar, whisk together the neutral oil, rice vinegar, soy sauce, honey, toasted sesame oil, grated ginger, and minced garlic until well combined and emulsified.
- Pour the dressing over the cabbage vegetable mixture and toss thoroughly until everything is evenly coated.
- Cover the bowl and refrigerate for at least 20-30 minutes to allow the flavors to meld and the cabbage to slightly soften.
- Just before serving, toss the slaw again, then garnish with the toasted sliced almonds, chopped cilantro, and sesame seeds.
