Description

Simple and flavorful ground beef enchiladas baked to perfection.


Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 ounces) enchilada sauce
  • 1 cup shredded cheddar cheese
  • 8 flour tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, and cook until softened.
  3. Add ground beef to the skillet and cook until browned, breaking it apart with a spoon. Drain excess fat.
  4. Stir in half of the enchilada sauce and season with salt and pepper.
  5. Spoon the beef mixture into tortillas and roll them up. Place seam-side down in a baking dish.
  6. Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
  7. Bake in the preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
  8. Let cool for a few minutes before serving.
