Simple and flavorful ground beef enchiladas baked to perfection.

- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (10 ounces) enchilada sauce
- 1 cup shredded cheddar cheese
- 8 flour tortillas
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- In a large skillet, heat olive oil over medium heat. Add onion and garlic, and cook until softened.
- Add ground beef to the skillet and cook until browned, breaking it apart with a spoon. Drain excess fat.
- Stir in half of the enchilada sauce and season with salt and pepper.
- Spoon the beef mixture into tortillas and roll them up. Place seam-side down in a baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
- Bake in the preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
- Let cool for a few minutes before serving.
