Ingredients
Scale
- 1 pound boneless, skinless chicken breasts, sliced into thin strips
- 2 tablespoons vegetable oil
- 1/4 cup honey
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- Salt and pepper to taste
- Optional: Sesame seeds for garnish
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced chicken to the skillet and season with salt and pepper. Stir fry until the chicken is browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, add the remaining tablespoon of oil. Add garlic and ginger, stirring for about 1 minute until fragrant.
- Add the bell pepper, broccoli, and carrot to the skillet. Stir fry for 3-4 minutes until the vegetables are tender-crisp.
- In a small bowl, whisk together honey and soy sauce. Pour the mixture into the skillet with the vegetables.
- Return the cooked chicken to the skillet and toss everything together to coat in the sauce. Cook for an additional 2-3 minutes until heated through.
- Serve hot, garnished with sesame seeds if desired.
Notes
For a spicier version, add red pepper flakes to the sauce. This recipe pairs well with rice or noodles.
