Description

A hearty and comforting soup that captures the flavors of traditional lasagna in a quick, one-pot meal.


Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 1 teaspoon Italian seasoning
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat until no longer pink; drain excess fat.
  2. Add the diced onion and minced garlic to the pot; cook until softened, about 3-4 minutes.
  3. Stir in the crushed tomatoes, beef broth, and Italian seasoning; bring to a boil.
  4. Add the broken lasagna noodles to the pot and cook until tender, about 10 minutes.
  5. In a small bowl, mix the ricotta and Parmesan cheeses; season with salt and pepper.
  6. Serve the soup hot, topped with a dollop of the cheese mixture.

Notes

For a vegetarian version, substitute ground beef with plant-based crumbles. Great paired with garlic bread.
