Description

A moist and delicious bread made with lemon and zucchini, perfect for a quick treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 cup grated zucchini

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat eggs, oil, sugar, lemon zest, and lemon juice until well combined.
  4. Stir in grated zucchini.
  5. Add dry ingredients to wet ingredients and stir until just combined.
  6. Pour batter into prepared pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For a healthier version, substitute half the flour with whole wheat flour.
