Ingredients

- 2 salmon fillets (about 6 ounces each)
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon fresh oregano, chopped
- 1 tablespoon fresh basil, chopped
- 1 teaspoon garlic, minced
- 1 lemon, sliced
- Salt and pepper to taste
- Optional: Cherry tomatoes and olives for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- Place the salmon fillets on the baking sheet and drizzle with olive oil.
- Sprinkle the salmon with chopped oregano, basil, garlic, salt, and pepper.
- Arrange lemon slices on top of the salmon.
- Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven and let rest for a few minutes before serving.
- Garnish with cherry tomatoes and olives if desired.

For the best flavor, use fresh herbs; this dish pairs well with a side of quinoa or roasted vegetables.
