Description

These mini cheesecakes are a simple, no-bake dessert combining fresh strawberries and bananas for a creamy treat.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 ripe bananas, sliced
  • 1 cup fresh strawberries, chopped
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping

Instructions

  1. In a bowl, mix graham cracker crumbs and melted butter until combined.
  2. Press the mixture into the bottom of mini cheesecake molds or muffin liners.
  3. Layer sliced bananas and chopped strawberries over the crust.
  4. In another bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
  5. Fold in whipped topping and spread over the fruit layer.
  6. Refrigerate for at least 2 hours or until set.
  7. Remove from molds and serve chilled.

Notes

For best results, use ripe bananas and fresh strawberries. Store in the refrigerator for up to 3 days.
