These mini cheesecakes are a simple, no-bake dessert combining fresh strawberries and bananas for a creamy treat.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 ripe bananas, sliced
- 1 cup fresh strawberries, chopped
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup whipped topping
Instructions
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of mini cheesecake molds or muffin liners.
- Layer sliced bananas and chopped strawberries over the crust.
- In another bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
- Fold in whipped topping and spread over the fruit layer.
- Refrigerate for at least 2 hours or until set.
- Remove from molds and serve chilled.
Notes
For best results, use ripe bananas and fresh strawberries. Store in the refrigerator for up to 3 days.
