Description

Patty melts are one of our favorite diner-style sandwiches, paired with a super-delicious secret sauce. They’re grilled cheese on steroids, and somehow they’re even better homemade. Skip the diner crowds and make them yourself tonight!


Ingredients

  • For the secret sauce:
  • 1/2 c. mayonnaise
  • 2 tbsp. ketchup
  • 1 tbsp. Dijon mustard
  • 1 tsp. yellow mustard
  • 3 tbsp. pickle relish
  • 1 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/2 tsp. paprika
  • Kosher salt
  • Freshly ground black pepper
  • For the patty melts:
  • 2 tbsp. butter
  • 1 onion, thinly sliced
  • 1 lb. ground beef
  • Kosher salt
  • Freshly ground black pepper
  • 4 slices Swiss cheese
  • 4 slices rye bread, toasted

Instructions

  1. Make secret sauce: In a small bowl, whisk together all sauce ingredients until fully combined. Taste and season with more salt and pepper, if needed. Set aside or store in fridge in an airtight container for up to a week.
  2. In a large skillet over medium-high heat, melt 1 tablespoon butter. Add onion and cook until deeply caramelized, about 8 minutes. (If pan seems dry, add a splash of water.) Remove to a plate and wipe out skillet.
  3. Make patties: In a bowl, mix together beef with a big pinch of salt and pepper. Form into 4 thin patties.
  4. In the same skillet over medium-high heat, melt remaining tablespoon butter. Add patties and cook about 2 minutes per side, or until crunchy and cooked through. (If you like it medium-rare, cook 1 minute per side.)
  5. Once the patties are cooked, top each with a slice of cheese. Let melt for another 30 seconds, then assemble sandwiches. Spread sauce on each slice of bread. Layer with patties, onions, more cheese (optional), and second slice of bread.
  6. Wipe out skillet and heat over medium heat. Add sandwiches and cook until bread is golden on one side, about 3 minutes. Flip and cook 3 minutes more, pressing down with a spatula halfway through to help melt everything together.
