Description

These cookies combine the flavors of pecan pie in a buttery, sweet, and nutty cookie form.


Ingredients

  • For the cookie dough:
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • For the pecan topping:
  • 1 cup chopped pecans
  • 1/2 cup corn syrup
  • 1/4 cup brown sugar
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt; gradually add to the creamed mixture and mix well.
  5. Drop tablespoonfuls of dough onto the prepared baking sheets.
  6. In a small saucepan, combine pecans, corn syrup, brown sugar, butter, and vanilla; cook over medium heat until thickened.
  7. Spoon the pecan mixture onto the center of each dough ball.
  8. Bake for 10-12 minutes or until edges are lightly browned.
  9. Allow cookies to cool on the baking sheets for 5 minutes before transferring to wire racks.

Notes

Store in an airtight container for up to 5 days. For a crunchier texture, bake a few minutes longer.
