- For the cookie dough:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs

- For the pecan topping:
- 1 cup chopped pecans
- 1/2 cup corn syrup
- 1/4 cup brown sugar
- 1 tablespoon butter
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350ยฐF (175ยฐC) and line baking sheets with parchment paper.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt; gradually add to the creamed mixture and mix well.
- Drop tablespoonfuls of dough onto the prepared baking sheets.
- In a small saucepan, combine pecans, corn syrup, brown sugar, butter, and vanilla; cook over medium heat until thickened.
- Spoon the pecan mixture onto the center of each dough ball.
- Bake for 10-12 minutes or until edges are lightly browned.
- Allow cookies to cool on the baking sheets for 5 minutes before transferring to wire racks.
Notes
Store in an airtight container for up to 5 days. For a crunchier texture, bake a few minutes longer.
