Description

Delicious pumpkin blondies made with maple syrup for a fall flavor.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup pumpkin puree
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1/2 cup pure maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and grease a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, mix the pumpkin puree, melted butter, brown sugar, maple syrup, eggs, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in the chopped walnuts if using.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool completely in the pan before cutting into squares.

Notes

For a vegan version, substitute butter with coconut oil and eggs with flax eggs.
