Description

These easy red velvet cookies are soft, chewy, and topped with a creamy frosting, perfect for a quick dessert.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 tablespoon red food coloring
  • For frosting: 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, and red food coloring until well combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Scoop dough onto prepared baking sheets, about 2 inches apart.
  7. Bake for 8-10 minutes or until edges are set. Let cool on sheets for 5 minutes, then transfer to wire racks.
  8. For frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until creamy.
  9. Spread frosting on cooled cookies.

Notes

Store cookies in an airtight container for up to 3 days. Add more food coloring for a deeper red hue if desired.
