Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix ricotta cheese, chopped spinach, garlic, and Parmesan cheese. Season with salt and pepper.
  3. Heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper, then sear for 2-3 minutes per side.
  4. Transfer chicken to a baking dish and top each breast with the ricotta mixture.
  5. Bake in the preheated oven for 20-25 minutes, or until chicken is cooked through.
