Ingredients

  • 1 pound fresh salmon, skin removed and finely chopped
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • For the sauce: 1 ripe avocado
  • 1/4 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1/4 teaspoon cumin

Instructions

  1. In a large bowl, combine the chopped salmon, breadcrumbs, egg, parsley, garlic powder, salt, and pepper. Mix until well combined.
  2. Form the mixture into small balls, about 1 inch in diameter.
  3. Heat a skillet over medium heat and add a bit of oil. Cook the salmon balls for 4-5 minutes on each side until golden and cooked through.
  4. For the sauce: In a blender, combine the avocado, Greek yogurt, lime juice, and cumin. Blend until smooth.
  5. Serve the salmon balls with the creamy avocado sauce on the side.

Notes
