- 1 (14 ounce) can sweetened condensed milk
- 1 cup brown sugar
- 1/2 cup unsalted butter
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 2 cups semi-sweet chocolate chips
- 1 tablespoon shortening (optional, for tempering)
Instructions
- In a saucepan over medium heat, combine condensed milk, brown sugar, butter, and heavy cream.
- Stir continuously until the mixture comes to a boil, then reduce heat and simmer for 8-10 minutes, stirring occasionally, until it reaches a caramel color and thickens slightly (it should read 230ยฐF on a candy thermometer).
- Remove from heat, stir in vanilla extract and sea salt. Let cool to room temperature.
- Meanwhile, melt chocolate chips with shortening (if using) in a microwave or double boiler, stirring until smooth.
- Pour half the melted chocolate into truffle molds or mini muffin tins lined with parchment paper. Spoon a small amount of caramel on top, then cover with the remaining chocolate.
- Chill in the refrigerator for at least 30 minutes until set. Remove from molds and serve.
Notes
For best results, chill the truffles before serving. Store in an airtight container in the fridge for up to 1 week.
