Description

A quick and hearty one-pan meal featuring sausage, rice, and vegetables, ideal for busy weeknights.


Ingredients

Scale
  • 1 pound smoked sausage, sliced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 medium onion, diced
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced sausage and cook until browned, about 5 minutes.
  3. Add diced onion, bell pepper, and garlic; sauté until softened, about 3 minutes.
  4. Stir in rice and chicken broth; bring to a boil.
  5. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
  6. Season with salt and pepper, and fluff with a fork before serving.

Notes

For a spicier version, use hot sausage and add cayenne pepper to taste.
