- 1 pound smoked sausage, sliced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 medium onion, diced
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced sausage and cook until browned, about 5 minutes.
- Add diced onion, bell pepper, and garlic; sauté until softened, about 3 minutes.
- Stir in rice and chicken broth; bring to a boil.
- Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
- Season with salt and pepper, and fluff with a fork before serving.
Notes
For a spicier version, use hot sausage and add cayenne pepper to taste.
