For the Crust:
- 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
- 2 tbsp vegetable oil, divided
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp sesame seeds
- 2 green onions, sliced
Instructions
1. Prepare the Crust:
- In a small bowl, whisk together the soy sauce, honey, rice vinegar, and sesame oil. Set the sauce aside.
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
- Add the remaining tablespoon of oil to the skillet. Add the bell pepper, broccoli, and carrot. Stir-fry for 4-5 minutes until vegetables are crisp-tender.
- Add the garlic and ginger to the vegetables and cook for 1 minute until fragrant.
- Return the cooked chicken to the skillet. Pour the prepared sauce over everything and toss to combine. Cook for 2-3 minutes until everything is heated through and coated in the sauce.
- Garnish with sesame seeds and green onions before serving.
