Description

Quick and flavorful shrimp tacos topped with a creamy, zesty avocado sauce for a perfect weeknight meal.

Ingredients

Scale

For the Crust:

  • 1 lb medium shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 8 small corn or flour tortillas
  • 2 cups shredded cabbage or slaw mix
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges
  • For the Avocado Crema: 1 large avocado
  • 1/4 cup sour cream or Greek yogurt
  • 2 tbsp lime juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Make the avocado crema: In a blender or food processor, combine the avocado, sour cream, lime juice, and garlic. Blend until smooth. Season with salt and pepper. Set aside.
  2. Season the shrimp: In a medium bowl, toss the shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper until evenly coated.
  3. Cook the shrimp: Heat a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until pink and opaque.
  4. Warm the tortillas: Heat the tortillas in a dry skillet for about 30 seconds per side or according to package directions.
  5. Assemble the tacos: Fill each warm tortilla with shrimp, top with shredded cabbage, a drizzle of avocado crema, and a sprinkle of fresh cilantro. Serve immediately with lime wedges on the side.
