For the Crust:
- 1 lb medium shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 8 small corn or flour tortillas
- 2 cups shredded cabbage or slaw mix
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
- For the Avocado Crema: 1 large avocado
- 1/4 cup sour cream or Greek yogurt
- 2 tbsp lime juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Make the avocado crema: In a blender or food processor, combine the avocado, sour cream, lime juice, and garlic. Blend until smooth. Season with salt and pepper. Set aside.
- Season the shrimp: In a medium bowl, toss the shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper until evenly coated.
- Cook the shrimp: Heat a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until pink and opaque.
- Warm the tortillas: Heat the tortillas in a dry skillet for about 30 seconds per side or according to package directions.
- Assemble the tacos: Fill each warm tortilla with shrimp, top with shredded cabbage, a drizzle of avocado crema, and a sprinkle of fresh cilantro. Serve immediately with lime wedges on the side.
