- 1 cup uncooked rice
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup canned black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1 avocado, sliced
- Shredded lettuce
- Shredded cheese
- Sour cream
Instructions
- Cook the rice according to package instructions and set aside.
- In a skillet, brown the ground beef over medium heat until fully cooked.
- Drain any excess fat, then add the taco seasoning and a half cup of water. Simmer for 5 minutes.
- In a bowl, layer the cooked rice, seasoned beef, black beans, corn, and diced tomatoes.
- Top with avocado, shredded lettuce, cheese, and sour cream.
- Serve immediately for the best flavor.
Notes
For a healthier twist, use ground turkey instead of beef and add more vegetables.
