Description

A quick and healthy dinner featuring seasoned ground meat, rice, and fresh toppings for a flavorful meal.


Ingredients

  • 1 cup uncooked rice
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • Shredded lettuce
  • Shredded cheese
  • Sour cream

Instructions

  1. Cook the rice according to package instructions and set aside.
  2. In a skillet, brown the ground beef over medium heat until fully cooked.
  3. Drain any excess fat, then add the taco seasoning and a half cup of water. Simmer for 5 minutes.
  4. In a bowl, layer the cooked rice, seasoned beef, black beans, corn, and diced tomatoes.
  5. Top with avocado, shredded lettuce, cheese, and sour cream.
  6. Serve immediately for the best flavor.

Notes

For a healthier twist, use ground turkey instead of beef and add more vegetables.
