For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/2 cup melted butter
- 2 tablespoons espresso powder
- 3 packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1/2 cup heavy cream
- 2 tablespoons cocoa powder
Instructions
1. Prepare the Crust:
- Preheat the oven to 325°F (160°C).
- Mix graham cracker crumbs and melted butter, then press into a 9-inch springform pan.
- Dissolve espresso powder in 2 tablespoons of water, then beat with cream cheese, sugar, and vanilla.
- Mix in eggs one at a time, then add sour cream and heavy cream until smooth.
- Pour the mixture over the crust and bake for 50 minutes until set but slightly jiggly in the center.
- Cool to room temperature, refrigerate for at least 4 hours, dust with cocoa powder before serving.
