For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 2 tablespoons espresso powder
  • 3 packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 2 tablespoons cocoa powder

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 325°F (160°C).
  2. Mix graham cracker crumbs and melted butter, then press into a 9-inch springform pan.
  3. Dissolve espresso powder in 2 tablespoons of water, then beat with cream cheese, sugar, and vanilla.
  4. Mix in eggs one at a time, then add sour cream and heavy cream until smooth.
  5. Pour the mixture over the crust and bake for 50 minutes until set but slightly jiggly in the center.
  6. Cool to room temperature, refrigerate for at least 4 hours, dust with cocoa powder before serving.

Notes
