Description

A moist and delicious cake made with ripe bananas, vanilla, and crunchy walnuts, perfect for a quick dessert.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup chopped walnuts
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch cake pan.
  2. In a large bowl, mash the bananas and set aside.
  3. In another bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Stir in the vanilla extract and mashed bananas.
  6. In a separate bowl, whisk together the flour, baking soda, and salt.
  7. Gradually add the dry ingredients to the wet mixture, alternating with milk, and mix until just combined.
  8. Fold in the chopped walnuts.
  9. Pour the batter into the prepared pan and bake for 45-50 minutes, or until a toothpick inserted comes out clean.
  10. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For extra flavor, toast the walnuts before adding them to the batter. Store in an airtight container for up to 3 days.
