Description

Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/2 cup eggnog
  • For the glaze:
  • 2 cups powdered sugar
  • 1/4 cup eggnog
  • 1/2 teaspoon vanilla extract
  • Pinch of nutmeg for sprinkling

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and nutmeg. Set aside.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, and eggnog until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  6. Drop rounded tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 8-10 minutes, or until the edges are lightly golden. The centers should still be soft.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  9. For the glaze: In a small bowl, whisk together powdered sugar, eggnog, and vanilla extract until smooth.
  10. Drizzle the glaze over the cooled cookies and sprinkle with a pinch of nutmeg.

Notes

Store cookies in an airtight container at room temperature for up to 3 days. The dough can be refrigerated for up to 2 days before baking. For extra eggnog flavor, you can substitute some of the butter with room-temperature eggnog for a richer taste.
