- 1 large egg
- 2 teaspoons vanilla extract
- 1/2 cup eggnog
- For the glaze:
- 2 cups powdered sugar
- 1/4 cup eggnog
- 1/2 teaspoon vanilla extract
- Pinch of nutmeg for sprinkling
Instructions
- Preheat your oven to 350ยฐF (175ยฐC) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and nutmeg. Set aside.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg, vanilla extract, and eggnog until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
- Drop rounded tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 8-10 minutes, or until the edges are lightly golden. The centers should still be soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- For the glaze: In a small bowl, whisk together powdered sugar, eggnog, and vanilla extract until smooth.
- Drizzle the glaze over the cooled cookies and sprinkle with a pinch of nutmeg.
Notes
Store cookies in an airtight container at room temperature for up to 3 days. The dough can be refrigerated for up to 2 days before baking. For extra eggnog flavor, you can substitute some of the butter with room-temperature eggnog for a richer taste.
