Description

These eggplant roll-ups feature tender slices of eggplant filled with a creamy ricotta and spinach mixture, baked to perfection.

For the Crust:

  • 2 large eggplants, sliced lengthwise
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, chopped
  • 1 cup marinara sauce
  • 1/2 cup grated Parmesan cheese

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. Grill or bake the eggplant slices until soft.
  3. Mix ricotta cheese, spinach, and half of the Parmesan cheese together in a bowl. Spread the mixture on each eggplant slice. Roll up and place them in a baking dish with marinara sauce.
  4. Sprinkle remaining Parmesan cheese over top and bake for 20-25 minutes.
