These eggplant roll-ups feature tender slices of eggplant filled with a creamy ricotta and spinach mixture, baked to perfection.

For the Crust:
- 2 large eggplants, sliced lengthwise
- 1 cup ricotta cheese
- 2 cups fresh spinach, chopped
- 1 cup marinara sauce
- 1/2 cup grated Parmesan cheese
Instructions
1. Prepare the Crust:
- Preheat your oven to 375ยฐF (190ยฐC).
- Grill or bake the eggplant slices until soft.
- Mix ricotta cheese, spinach, and half of the Parmesan cheese together in a bowl. Spread the mixture on each eggplant slice. Roll up and place them in a baking dish with marinara sauce.
- Sprinkle remaining Parmesan cheese over top and bake for 20-25 minutes.
