Description
An elegant chocolate roll cake filled with cherries and whipped cream, inspired by the classic Black Forest dessert.
Ingredients
- For the cake: 4 large eggs, 1 cup granulated sugar, 1 teaspoon vanilla extract, 3/4 cup all-purpose flour, 1/4 cup cocoa powder, 1 teaspoon baking powder, 1/4 teaspoon salt
- For the filling: 1 cup cherry preserves, 2 cups heavy whipping cream, 1/4 cup powdered sugar, 1 teaspoon vanilla extract, 1 cup pitted cherries (fresh or canned)
Instructions
- Preheat the oven to 375°F (190°C). Line a 10×15 inch jelly roll pan with parchment paper and grease it lightly.
- In a large bowl, beat the eggs and granulated sugar until thick and pale. Add vanilla extract and mix well.
- Sift together the flour, cocoa powder, baking powder, and salt. Gradually fold into the egg mixture until just combined.
- Spread the batter evenly in the prepared pan and bake for 10-12 minutes, or until the cake springs back when touched.
- While the cake is baking, lay a clean kitchen towel on a flat surface and dust it with powdered sugar.
- Remove the cake from the oven and immediately invert it onto the towel. Peel off the parchment paper and roll the cake up in the towel. Let it cool completely.
- For the filling, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Unroll the cooled cake and spread the cherry preserves over it, followed by the whipped cream and cherries.
- Roll the cake back up carefully and chill in the refrigerator for at least 1 hour before serving. Slice and enjoy!

Ensure the cake is rolled while warm to prevent cracking. Garnish with chocolate shavings for extra elegance.
