For the Crust:
- 4 large eggs, room temperature
- 100g granulated sugar
- 80g all-purpose flour, sifted
- 20g cocoa powder, sifted
- 1/2 teaspoon baking powder
- 300g heavy whipping cream
- 50g powdered sugar
- 150g pitted cherries, halved
Instructions
1. Prepare the Crust:
- Preheat oven to 180ยฐC (350ยฐF) and line a 23×33 cm jelly roll pan with parchment paper.
- In a large bowl, beat the eggs and granulated sugar until light and fluffy. Gently fold in sifted flour, cocoa powder, and baking powder until well combined.
- Pour the batter into the prepared pan, smoothing the top with a spatula. Bake for 10-12 minutes until the cake is set.
- Turn the cake onto a clean kitchen towel dusted with powdered sugar and roll it up gently while warm. Let cool completely.
- Whip the heavy cream with powdered sugar until stiff peaks form. Unroll the cooled cake, spread an even layer of whipped cream, and sprinkle with pitted cherries.
- Gently re-roll the cake and refrigerate for at least 1 hour before serving.
