For the Crust:

  • 4 large eggs, room temperature
  • 100g granulated sugar
  • 80g all-purpose flour, sifted
  • 20g cocoa powder, sifted
  • 1/2 teaspoon baking powder
  • 300g heavy whipping cream
  • 50g powdered sugar
  • 150g pitted cherries, halved

Instructions

1. Prepare the Crust:

  1. Preheat oven to 180ยฐC (350ยฐF) and line a 23×33 cm jelly roll pan with parchment paper.
  2. In a large bowl, beat the eggs and granulated sugar until light and fluffy. Gently fold in sifted flour, cocoa powder, and baking powder until well combined.
  3. Pour the batter into the prepared pan, smoothing the top with a spatula. Bake for 10-12 minutes until the cake is set.
  4. Turn the cake onto a clean kitchen towel dusted with powdered sugar and roll it up gently while warm. Let cool completely.
  5. Whip the heavy cream with powdered sugar until stiff peaks form. Unroll the cooled cake, spread an even layer of whipped cream, and sprinkle with pitted cherries.
  6. Gently re-roll the cake and refrigerate for at least 1 hour before serving.
