For the Crust:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups mixed vegetables (bell peppers, zucchini, and carrots)
Instructions
1. Prepare the Crust:
- In a large bowl, mix olive oil, lime juice, paprika, cayenne pepper, garlic powder, salt, and pepper.
- Add chicken breasts to the bowl and coat them in the marinade. Let it sit for at least 30 minutes.
- Preheat grill to medium-high heat. Grill chicken for about 6-7 minutes on each side until cooked through. Serve with roasted vegetables.
