- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups potatoes, diced
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 2 cups shredded cheddar cheese
- 1 cup milk
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add the diced onion and minced garlic to the pot and sauté until softened.
- Pour in the chicken broth and add the potatoes, carrots, and celery. Bring to a boil, then reduce heat and simmer for 15-20 minutes until vegetables are tender.
- Stir in the shredded cheddar cheese and milk until melted and creamy.
- Season with salt and pepper to taste. Serve hot.
Notes
For a healthier version, use low-fat cheese and ground turkey instead of beef.
