For the Crust:
- 4 boneless, skinless chicken breasts
- 3 limes, juiced and zested
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 ripe avocados, diced
- 1/2 red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced
Instructions
1. Prepare the Crust:
- In a bowl, whisk together lime juice, zest, olive oil, garlic, cumin, chili powder, salt, and pepper. Place chicken in a dish, pour marinade over it, and refrigerate for at least 30 minutes.
- While chicken marinates, prepare the salsa by gently combining diced avocado, red onion, cilantro, and jalapeño in a bowl. Season with a pinch of salt and set aside.
- Heat a grill or grill pan over medium-high heat. Cook the chicken for 6-7 minutes per side, or until cooked through and grill marks appear. Serve immediately topped with the fresh avocado salsa.
