Juicy, citrus-marinated chicken breasts grilled to perfection and topped with a fresh, zesty avocado salsa for a vibrant and healthy meal.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 3 limes, juiced and zested
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 ripe avocados, diced
  • 1/2 red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together lime juice, zest, olive oil, garlic, cumin, chili powder, salt, and pepper. Place chicken in a dish, pour marinade over it, and refrigerate for at least 30 minutes.
  2. While chicken marinates, prepare the salsa by gently combining diced avocado, red onion, cilantro, and jalapeño in a bowl. Season with a pinch of salt and set aside.
  3. Heat a grill or grill pan over medium-high heat. Cook the chicken for 6-7 minutes per side, or until cooked through and grill marks appear. Serve immediately topped with the fresh avocado salsa.
