Ingredients

  • 3 large eggs
  • 1 cup low-fat cottage cheese
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cream of tartar
  • Pinch of salt

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the egg whites from the yolks. Place the whites in a large bowl and the yolks in a separate bowl.
  3. Add the cottage cheese, baking powder, and a pinch of salt to the egg yolks. Mix until smooth.
  4. Beat the egg whites and cream of tartar with an electric mixer until stiff peaks form.
  5. Gently fold the yolk mixture into the egg whites until just combined.
  6. Spoon the mixture onto the prepared baking sheet in rounds.
  7. Bake for 25-30 minutes or until golden and firm.
  8. Allow to cool completely before serving.
