- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 4 large whole wheat wraps
- 1 cup chopped romaine lettuce
- 1/2 cup sliced cucumbers
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup kalamata olives, pitted and sliced
- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh parsley, chopped
Instructions
- In a bowl, mix olive oil, oregano, garlic powder, salt, and pepper. Add chicken breasts and marinate for 15 minutes.
- Preheat grill or skillet over medium heat. Grill chicken for 6-7 minutes per side until cooked through. Let rest, then slice into strips.
- In a large bowl, combine lettuce, cucumbers, tomatoes, red onion, feta, olives, and parsley. Drizzle with lemon juice and toss gently.
- Lay out each wrap and add a portion of the salad mixture and sliced chicken. Roll up tightly.
- Serve immediately or wrap in foil for portability.
Notes
For a vegetarian version, substitute chicken with grilled eggplant or chickpeas.
