Description

These wraps feature grilled chicken with fresh Mediterranean vegetables, herbs, and a zesty dressing, perfect for a quick and healthy meal.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 large whole wheat wraps
  • 1 cup chopped romaine lettuce
  • 1/2 cup sliced cucumbers
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted and sliced
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a bowl, mix olive oil, oregano, garlic powder, salt, and pepper. Add chicken breasts and marinate for 15 minutes.
  2. Preheat grill or skillet over medium heat. Grill chicken for 6-7 minutes per side until cooked through. Let rest, then slice into strips.
  3. In a large bowl, combine lettuce, cucumbers, tomatoes, red onion, feta, olives, and parsley. Drizzle with lemon juice and toss gently.
  4. Lay out each wrap and add a portion of the salad mixture and sliced chicken. Roll up tightly.
  5. Serve immediately or wrap in foil for portability.

Notes

For a vegetarian version, substitute chicken with grilled eggplant or chickpeas.
