For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 tablespoons sugar
- 16 ounces cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup mixed fresh fruits (strawberries, blueberries, mango, kiwi)
Instructions
1. Prepare the Crust:
- Preheat the oven to 325ยฐF (165ยฐC).
- In a bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Press mixture into the bottom of a 9-inch springform pan.
- In another bowl, beat cream cheese and 1/2 cup of sugar until smooth. Mix in vanilla extract and eggs one at a time. Pour over the crust.
- Bake for 30 minutes or until the center is set. Cool and refrigerate for at least 3 hours.
- Top with fresh fruits before serving.
