Description

A refreshing and creamy cheesecake topped with a vibrant assortment of fresh fruits.


Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tablespoons sugar
  • 16 ounces cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup mixed fresh fruits (strawberries, blueberries, mango, kiwi)

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 325ยฐF (165ยฐC).
  2. In a bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Press mixture into the bottom of a 9-inch springform pan.
  3. In another bowl, beat cream cheese and 1/2 cup of sugar until smooth. Mix in vanilla extract and eggs one at a time. Pour over the crust.
  4. Bake for 30 minutes or until the center is set. Cool and refrigerate for at least 3 hours.
  5. Top with fresh fruits before serving.

Notes

You can customize the seasonings to taste.
