Description

A delightful tropical twist on the classic cheesecake, combining the creaminess of cheesecake with the refreshing flavors of a fruit salad.


Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 1/2 cup sugar
  • 2 packages (8 oz each) cream cheese, softened
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup mixed tropical fruits (pineapple, mango, kiwi, and papaya), diced
  • 1/4 cup shredded coconut

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 325ยฐF (163ยฐC).
  2. Mix the graham cracker crumbs and melted butter in a bowl, then press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In another bowl, beat the cream cheese and sugar until smooth, then add the vanilla extract and eggs, and blend until creamy.
  4. Pour the cheesecake mixture over the crust.
  5. Bake in the preheated oven for 25-30 minutes or until the center is set.
  6. Allow the cheesecake to cool to room temperature, then chill in the refrigerator for at least 3 hours.
  7. Before serving, top the cheesecake with the mixed tropical fruits and sprinkle with shredded coconut.
