Ingredients

  • 1 pound ground beef
  • 9 ounces refrigerated spinach tortellini
  • 2 cups fresh spinach leaves
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • Optional: Red pepper flakes for heat

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned and fully cooked, about 5-7 minutes. Drain any excess fat.
  2. While the beef is cooking, bring a pot of salted water to a boil and cook the spinach tortellini according to package instructions. Drain and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  4. Add the fresh spinach to the skillet and cook until wilted, about 2 minutes.
  5. Stir in the cooked beef and tortellini. Season with salt, black pepper, and red pepper flakes if using. Toss everything together until well combined and heated through.
  6. Remove from heat and sprinkle with grated Parmesan cheese before serving.

Notes

This dish is perfect for a quick weeknight meal and pairs well with garlic bread. For a creamier version, add 1/4 cup of heavy cream to the sauce.
