- 1 pound ground beef
- 9 ounces refrigerated spinach tortellini
- 2 cups fresh spinach leaves
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- Optional: Red pepper flakes for heat
Instructions
- In a large skillet over medium heat, cook the ground beef until browned and fully cooked, about 5-7 minutes. Drain any excess fat.
- While the beef is cooking, bring a pot of salted water to a boil and cook the spinach tortellini according to package instructions. Drain and set aside.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Add the fresh spinach to the skillet and cook until wilted, about 2 minutes.
- Stir in the cooked beef and tortellini. Season with salt, black pepper, and red pepper flakes if using. Toss everything together until well combined and heated through.
- Remove from heat and sprinkle with grated Parmesan cheese before serving.
Notes
This dish is perfect for a quick weeknight meal and pairs well with garlic bread. For a creamier version, add 1/4 cup of heavy cream to the sauce.
