Description

Ingredients

  • 4 cod fillets (about 1 lb total)
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 tablespoons sweet chili sauce
  • 1 lime, juiced and zested
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small saucepan, melt the butter over medium heat and add the minced garlic. Cook for 1-2 minutes until fragrant, then remove from heat.
  3. Pat the cod fillets dry and season with salt and pepper. Brush the garlic butter mixture generously over the cod strips.
  4. Place the cod on the prepared baking sheet and bake for 12-15 minutes, or until the fish flakes easily with a fork.
  5. In a small bowl, mix the sweet chili sauce with lime juice and zest to create the sauce.
  6. Remove the cod from the oven, drizzle with the sweet chili lime sauce, and garnish with fresh cilantro before serving.

Notes

For a spicier version, add red pepper flakes to the garlic butter. This dish pairs well with steamed vegetables or rice.
