Ingredients
Scale
- 4 cod fillets (about 1 lb total)
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 2 tablespoons sweet chili sauce
- 1 lime, juiced and zested
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a small saucepan, melt the butter over medium heat and add the minced garlic. Cook for 1-2 minutes until fragrant, then remove from heat.
- Pat the cod fillets dry and season with salt and pepper. Brush the garlic butter mixture generously over the cod strips.
- Place the cod on the prepared baking sheet and bake for 12-15 minutes, or until the fish flakes easily with a fork.
- In a small bowl, mix the sweet chili sauce with lime juice and zest to create the sauce.
- Remove the cod from the oven, drizzle with the sweet chili lime sauce, and garnish with fresh cilantro before serving.
Notes
For a spicier version, add red pepper flakes to the garlic butter. This dish pairs well with steamed vegetables or rice.
