Description

A delicious dish featuring tender chicken coated in garlic and Parmesan, served over creamy mashed potatoes.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 cup all-purpose flour
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 2 tablespoons butter

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix flour, Parmesan, garlic, salt, and pepper.
  3. Dredge chicken breasts in the mixture.
  4. Heat olive oil in a skillet over medium heat and sear chicken for 3-4 minutes per side.
  5. Transfer chicken to a baking dish and bake for 20-25 minutes until cooked through.
  6. While chicken bakes, boil potatoes in salted water until tender, about 15 minutes.
  7. Drain potatoes and mash with milk and butter until smooth.
  8. Serve chicken over mashed potatoes.

Notes

For a crispier texture, broil the chicken for the last 2 minutes. Adjust seasoning as needed.
