- 4 boneless, skinless chicken breasts
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 cup all-purpose flour
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 large potatoes, peeled and cubed
- 1/2 cup milk
- 2 tablespoons butter
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix flour, Parmesan, garlic, salt, and pepper.
- Dredge chicken breasts in the mixture.
- Heat olive oil in a skillet over medium heat and sear chicken for 3-4 minutes per side.
- Transfer chicken to a baking dish and bake for 20-25 minutes until cooked through.
- While chicken bakes, boil potatoes in salted water until tender, about 15 minutes.
- Drain potatoes and mash with milk and butter until smooth.
- Serve chicken over mashed potatoes.
Notes
For a crispier texture, broil the chicken for the last 2 minutes. Adjust seasoning as needed.
