Description

This comforting dish features tender garlic parmesan chicken served over creamy mashed potatoes, perfect for a family dinner.


Ingredients

  • 2 lbs boneless chicken breasts
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 2 lbs potatoes, peeled and cubed
  • 1/2 cup butter
  • 1 cup milk
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper.
  3. In a skillet, heat olive oil over medium heat and sear chicken for 3-4 minutes per side.
  4. Transfer chicken to a baking dish, top with minced garlic and Parmesan cheese.
  5. Bake for 25-30 minutes until chicken is cooked through.
  6. While chicken bakes, boil potatoes in salted water until tender, about 15 minutes.
  7. Drain potatoes and mash with butter and milk until smooth.
  8. Serve chicken over mashed potatoes and garnish as desired.
