Description

Juicy, tender chicken pieces marinated in a rich garlic and parmesan sauce, then grilled to perfection on skewers for a quick and flavorful meal.

For the Crust:

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice

Instructions

1. Prepare the Crust:

  1. In a large bowl, whisk together olive oil, parmesan cheese, minced garlic, parsley, oregano, paprika, salt, pepper, and lemon juice to create the marinade.
  2. Add the cubed chicken to the bowl and toss until all pieces are evenly coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  3. Preheat an outdoor grill or grill pan to medium-high heat. Thread the marinated chicken pieces onto skewers.
  4. Grill the skewers for 5-7 minutes per side, or until the chicken is cooked through and has nice grill marks.
  5. Remove from grill, let rest for 2-3 minutes, then serve immediately.
