For the Crust:
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 1/2 cup grated parmesan cheese
- 4 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp lemon juice
Instructions
1. Prepare the Crust:
- In a large bowl, whisk together olive oil, parmesan cheese, minced garlic, parsley, oregano, paprika, salt, pepper, and lemon juice to create the marinade.
- Add the cubed chicken to the bowl and toss until all pieces are evenly coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
- Preheat an outdoor grill or grill pan to medium-high heat. Thread the marinated chicken pieces onto skewers.
- Grill the skewers for 5-7 minutes per side, or until the chicken is cooked through and has nice grill marks.
- Remove from grill, let rest for 2-3 minutes, then serve immediately.
