For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup molasses
  • 1/2 cup hot water

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350ยฐF (175ยฐC). Grease and flour an 8-inch square baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, then stir in the molasses until well combined.
  4. Gradually mix in the dry ingredients, alternating with the hot water, until the batter is smooth.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
