- 4 medium golden beets, trimmed and scrubbed
- 8 ounces burrata cheese, drained and torn into pieces
- 1/2 cup shelled pistachios, roughly chopped
- Zest of 1 orange
- Zest of 1 lemon
- 2 tablespoons extra-virgin olive oil
- Salt and freshly ground black pepper, to taste
- Fresh herbs like mint or basil, for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C). Wrap each beet individually in aluminum foil and roast on a baking sheet for 45-60 minutes, or until tender when pierced with a fork.
- Once cooled, peel the beets and slice them into 1/4-inch thick rounds.
- On serving plates, stack the beet slices with pieces of burrata cheese in between, creating small towers.
- Sprinkle the stacks with chopped pistachios and citrus zests.
- Drizzle with olive oil and season with salt and pepper to taste.
- Garnish with fresh herbs if desired, and serve immediately.
Notes
For the best results, use fresh, high-quality burrata and roast the beets ahead of time to allow them to cool completely. This dish pairs well with a light salad or crusty bread.
