Description

A vibrant and elegant dish featuring roasted golden beets layered with creamy burrata cheese, topped with crunchy pistachios and fresh citrus zest for a refreshing burst of flavor.


Ingredients

  • 4 medium golden beets, trimmed and scrubbed
  • 8 ounces burrata cheese, drained and torn into pieces
  • 1/2 cup shelled pistachios, roughly chopped
  • Zest of 1 orange
  • Zest of 1 lemon
  • 2 tablespoons extra-virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • Fresh herbs like mint or basil, for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap each beet individually in aluminum foil and roast on a baking sheet for 45-60 minutes, or until tender when pierced with a fork.
  2. Once cooled, peel the beets and slice them into 1/4-inch thick rounds.
  3. On serving plates, stack the beet slices with pieces of burrata cheese in between, creating small towers.
  4. Sprinkle the stacks with chopped pistachios and citrus zests.
  5. Drizzle with olive oil and season with salt and pepper to taste.
  6. Garnish with fresh herbs if desired, and serve immediately.

Notes

For the best results, use fresh, high-quality burrata and roast the beets ahead of time to allow them to cool completely. This dish pairs well with a light salad or crusty bread.
