Ingredients

  • 4 medium golden beets, peeled and sliced into 1/4-inch rounds
  • 8 ounces burrata cheese
  • 1/4 cup shelled pistachios, chopped
  • Zest of 1 orange
  • Zest of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs like mint or basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the sliced golden beets with olive oil, salt, and pepper.
  3. Roast the beets on a baking sheet for 25-30 minutes, or until tender.
  4. While the beets are roasting, prepare the toppings by chopping the pistachios and zesting the citrus.
  5. Once cooled, assemble the stacks by layering beet slices with pieces of burrata.
